Golden corn casserole: 1 (15.25 oz.) can libby's gourmet gold & white corn drained, 1/4 cup onion chopped, 1/2 tbsp. Margarine, 1 tbsp. Flour, 1 clove garlic minced, 1/4 tsp. Salt, 1/4 tsp. Pepper, 1/2 cup low-fat sour cream, 1 tsp. Crispy bacon crumbled, 1/2 tbsp. Chopped fresh chives. In small skillet, cook onions in margarine until tender. Add flour, garlic, salt, pepper, and sour cream. Cook until bubbly, stirring constantly. Remove from heat; add corn and half of bacon. Pour into 1- qt. Baking dish and sprinkle remaining bacon and chives over top. Bake at 350 f uncovered for 20-25 minutes. Makes 4 servings.
