The Story of 1-2-3 Gluten Free: Over ten years ago, I was diagnosed with celiac disease. As an adult, I was content to do without, rather than to eat what was available on the market. However, when two of my nieces and one nephew were diagnosed with celiac disease, I was determined that they should be able to eat only the best, as well as gluten-free versions of what their non-celiac friends were eating. In fact, I developed the Southern Glory Biscuit recipe when one of the children wanted to have pigs-in-a-blanket for her birthday. We soon found that the children and adults (both celiac and non-celiac) in our family enjoyed the foods I created. Having shared these foods with non-family members, again both celiac and non-celiac, we found these people were equally enthusiastic. Ingredients

Stone-Ground Yellow Cornmeal, Cornstarch, Corn Flour, Aluminum-Free Baking Powder (Sodium Acid Pyrophosphate, Baking Soda, Cornstarch, Monocalcium Phosphate), Salt, Baking Soda, Xanthan Gum, Niacin (Vitamin B3), Reduced Iron, Calcium Carbonate, Thiamin Mononitrate (Vitamin B1), Riboflavin (Vitamin B2), Folic Acid (Vitamin B9).


Directions

To Make Corn Bread: 1 package Micah's Mouthwatering Corn Bread Mix; 3 tbsp sugar (optional); 2 large eggs, room temperature (For egg free version, replace 2 eggs with 3 tbsp water, 3 tbsp vegetable oil and 2 tsp baking powder, mixed together); 2/3 cup buttermilk (For non-dairy buttermilk, add 2 teaspoons fresh lemon juice or 2 teaspoons cider vinegar to 2/3 cup warm milk substitute. Let sit until it thickens and cools [about 25 minutes]. Use in place of buttermilk in above recipe); 2/3 cup milk or milk substitute; 2 tbsp unsalted butter or unsalted margarine, melted or oil. 1. Preheat oven to 425 degrees F. Generously grease 9 inch square pan with non-stick spray. 2. Place 1-2-3 Gluten Free Micah's Mouthwatering Corn Bread Mix in bowl. Add sugar, eggs, buttermilk and milk and stir until combined. Stir in melted butter/oil. 3. Pour batter into pre-greased pan. 4. Bake for approximately 20 minutes, until top is golden brown and sides begin to pull away from pan. Baking times may vary by appliance. 5. Cut corn bread into squares. Serve warm. Makes 16 squares.
