YOU WILL NEED: 2 medium all-purpose potatoes, peeled and cut into 1/2-inch cubes (about 3 cups) 1 tbsp. oil 1 medium onion, finely chopped 1 green chile pepper, such as serrano, seeded and finely chopped (optional) 1 pkg. Saag Aloo Seasoning Mix 1 lb. baby spinach leaves 1/2 cup light or heavy cream DIRECTIONS: 1. PLACE potatoes in medium saucepan. Cover with water. Bring to boil. Reduce heat to low; cover and simmer 8 to 10 minutes or until potatoes are fork tender. Drain potatoes. Set aside. 2. HEAT oil in large skillet on medium heat. Add onion, chile and Seasoning Mix; cook and stir 3 minutes or until translucent. Add spinach in batches; cook and stir 2 minutes after each addition until spinach is fully wilted. 3. STIR in potatoes and cream until well blended. Bring to boil. Reduce heat to low; simmer 10 minutes stirring occasionally Makes 8 servings.PREP TIME: 10 minutes. COOK TIME: 30 minutes
