Ceretto Barolo Bussia Red Wine has a classic distinction of its growing site. This wine is delimited between Bussia Sottana (sotto, meaning lower/under) and Bussia Soprana (sopra means higher/above). A champion in ‘orienting the different shades of Barolo in a single direction,’ the Ceretto family owns a small parcel (0.73 HA) within this rather vast growing region (298,89 Ha), which has a southern exposure and is located in the heart of the Bussia Soprana. Fermented with native yeasts, Ceretto’s Barolo goes through soft punch-downs and pump-overs during its traditional cap-fermentation in stainless steel tanks. Alcoholic fermentation is followed a 20-25 day maceration and ML is performed in oak following harvest. Upon completion of ML, the wine is then aged for three years: the first in neutral 300L barrels and the remaining two years in large 50HL oak casks. In addition to barrel aging, the wine is also always aged for a minimum of one additional year in bottle before release. “Bussia is not a vineyard; it is an ode to diversity. For us, being able to study its shades has been a complete, immersive challenge.
