Zemas Recipe: Gluten Free Chocolate Chip Cookies: Makes 14-15 2 in. cookies. 1 package Zemas Madhouse Foods Gluten-Free Chocolate Chip Cookie Mix; 2 tbsp unsweetened applesauce; 4 tbsp oil of choice; 1/2 tbsp pure vanilla extract; optional add-ins: chopped walnuts or sunflower seeds, dried cherries, shredded unsweetened coconut flakes, cranberries, or chopped dates. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. In a mixing bowl, combine the applesauce, oil and vanilla. Add entire mix and combine thoroughly. Form 2 inch balls and place on cookie sheet. Using your palm or back of spoon, slightly flatten cookies. Bake 12-14 minutes. Cool on baking rack for 10 minutes. Store in an airtight container or freeze for later snacking!
