To substitute carob powder for cocoa, replace one part cocoa with 1-1/2 to 2 parts carob by weight. Sugar may need to be reduced by 25% to maintain ideal flavor. To substitute for baking chocolate, use 3 Tbsp carob powder and 1 Tbsp water in place of each 1 oz square chocolate.
