4-cheese baked pasta - serves 6, all you need - 1 package (16 oz) penne rigate, 1 jar (17.6 oz) tomato basil pasta sauce, 1 medium yellow onion, finely chopped, 2 cloves garlic, minced, 1 tsp red pepper flakes, optional, 1 cup low-fat ricotta cheese, 1/4 cup finely shredded parmesan cheese, 1 package (8 oz) that's smart finely shredded colby jack cheese, divided, fresh basil, chopped, for garnish, all you do - 1. Preheat oven to 375° f. 2. Spray 9x13-inch glass baking dish with nonstick cooking spray; Set aside. 3. Cook pasta according to package directions for al dente; Drain and set aside. 4. In large bowl, mix together pasta sauce, chopped onion, minced garlic and red pepper flakes; Fold in cooked pasta. 5. In another large bowl, mix together ricotta and parmesan cheeses. 6. Place half the pasta into prepared baking dish. Dollop ricotta and parmesan mixture over pasta and sprinkle with half the shredded colby jack cheese. Cover with remaining pasta and top with remaining colby jack cheese. 7. Bake 25 to 30 minutes or until heated through and cheese has melted. Remove from oven and garnish with fresh basil.
