1 can (15 oz.) crushed tomatoes
1-1/2 cups shredded or diced cooked chicken
garnish:
crushed tortilla chips
sour cream
lime wedges
make it:
1. prep ingredients: crush 1 cup tortilla chips. cut lime into wedges.
2. stir it up: combine contents of soup kit with broth and tomatoes in large stock pot.
3. now we’re cooking!: bring to boil over medium-high heat. reduce to low; simmer 15 min., stirring occasionally.
4. all together now: add chicken and stir. return to boil on medium-high heat. reduce heat to low; simmer 5 min. or until chicken reaches 165˚f.
5. the finishing touch: season with salt and pepper to taste. garnish each bowl with crushed tortilla chips, sour cream and lime wedge.
chef’s tip: for an extra dash of flavor, serve soup with diced avocado and chopped fresh cilantro.
