Directions

You Will Need: 8 corn tortillas; 8 oz (about 12 cups) shredded Monterey jack or cheddar cheese; 1 pouch Simply Organic Green Enchilada Simmer Sauce. Directions: 1. Preheat oven to 400 degrees. Lightly grease a 3-quart baking dish. 2. While oven is preheating, wrap tortillas in foil and warm in oven for 5 minutes. 3. To assemble enchiladas, place 2 tbsp of cheese into each warm tortilla. Roll each tortilla and place seam-side down in baking dish. 4. Cover tortillas with simmer sauce. Sprinkle with remaining cheese. 5. Cover with foil and bake for 12 minutes or until heated through. Remove foil & bake 5 minutes more. Serve with your favorite toppings.
