Chicken burrito - 1-2 tbsp. Olive oil, 2 chicken breasts, diced and patted very dry, 1 packet our family taco seasoning mix, 2/3 cups water, 3/4 cup cooked black beans (or half 15 oz. Can, drained), 3/4 cup our family frozen corn, 3/4 cup cooked brown rice, 1 - 1/2 cup our family mild salsa, 1 1/2 cups shredded cheddar cheese, our family flour tortillas, add 1-2 tablespoons olive oil to large skillet. Preheat over medium to medium high heat. Saute chicken until cooked through (no longer pink), about 3-4 minutes. Add water, taco seasoning, black beans, corn, brown rice, and salsa to chicken. Turn heat down to low and let mixture simmer for five minutes, stirring occasionally. Assemble burritos. Add a generous 1/3 cup meat mixture and 3 tablespoons shredded cheddar cheese to each tortilla. Serve with optional toppings of guacamole, sour cream or plain greek yogurt, pico de gallo.

heating directions - for best results: place tortillas on an ungreased skillet over medium-high heat for 10 to 15 seconds. Flip and heat for 5 to 10 seconds. Microwave: place 4 to 6 tortillas between 2 damp paper towels. Heat in microwave for 30 to 40 seconds until warm.
