In a medium skillet over high heat, heat the canola oil until just beginning to smoke. Add the shiitake mushrooms and cook until crispy, about 4 minutes, add the garlic and cook an additional 2 minutes and remove from heat. In a large bowl, combine the sesame oil, vinegar, soy sauce, sugar, sesame seeds, scallions. Add the pasta, mushrooms, and bell pepper and toss to evenly coat the pasta and serve.
preparation directions: bring 4 quarts of water to a rapid boil. If desired, add 2 teaspoons of salt. Gradually add 16oz of our family pot ready angel hair to boiling water. Stir gently and return to a rapid boil. Cook uncovered, stirring occasionally for 3 to 5 minutes, or until desired degree of tenderness is reached drain. For casseroles and pour-over sauces, rinse in hot water. For salads, rinse in cold water.
