Using about 12 inches x 12 inches of aluminum foil, curl in each side to make a small tray (pouch) just large enough for your fillet portion. Add as much marinade as you like, before continuing as directed below. Bake: (Recommended) Preheat oven to 375 degrees F. remove portion from pouch, place on baking sheet. From thawed: Bake on center oven rack for 15-18 minutes. From frozen: Bake on center oven rack for 25-30 minutes. Grill: From thawed: Preheat grill to medium-high. Remove portion from pouch. Place on grill for 5 minutes. Turn mahi over, and continue to grill for an additional 5-10 minutes. Microwave: (Only if you have to!) Remove portion from pouch and place on a dish that is microwave safe. Cover with plastic wrap, but slightly open at one end to allow venting. From thawed: Cooked on high for 2-3 minutes. Allow mahi to cool for 2 minutes before serving. From frozen: Cook on high for 3-4 minutes. Allow mahi to cool for 2 minutes before serving. Caution: Product will be hot. Cooking times are approximate, and vary as appliances vary. Though great care has been taken to remove them, small bones may be present.
