4 Simple Steps: 1. Combine rice, 3/4 cup water, and a pinch of salt in a small pot. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender and water has absorbed, about 15 minutes. Keep covered until ready to serve. Meanwhile, wash and dry all produce. Mince garlic. Peel and mince or grate ginger. Quarter lime. Place green beans and a splash of water in a medium, microwave-safe bowl. Cover with plastic wrap. 2. Pat chicken dry with paper towels; season with pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add chicken and cook until golden brown and cooked through, 5-7 minutes per side (Chicken is fully cooked when internal temperature reaches 165 degrees). Transfer to a plate to rest. Wash out pan. 3. Heat another drizzle of oil in same pan over medium-low heat. Add garlic and ginger. Cook, stirring, until fragrant and softened, about 1 minute. Add vinegar. Cook until evaporated, 1-2 minutes. Stir in stock concentrate, honey, half the soy sauce (use the rest as you like), and 2 tbsp water. Simmer until thickened and saucy, 2-3 minutes. Turn off heat. Return chicken to pan; turn to coat in sauce. 4. Microwave green beans until just tender, about 2 minutes. Drain any excess water from bowl. Toss beans with 1 tbsp butter. Season with salt, pepper, and a squeeze of lime juice. Fluff rice with a fork; season with salt and pepper. Divide green beans, rice, and chicken between plates. Top chicken with any remaining sauce. Serve with remaining lime wedges on the side.
