Why Beans May Cause Discomfort: Beans are high in fiber and complex sugars that our bodies have to work hard to digest which may cause intestinal gas. To reduce cooking time and intestinal gas soak the beans six to 12 hours ahead of cooking to help dissolve the complex sugars. Drain and replace the soaking water as frequently as possible. Over time increase the amount of beans you eat to help your body adapt.

Directions

You Will Need: 1 lb ground beef or turkey (optional); 1 - 15 oz can tomato sauce or 1 - 8 oz can tomato paste. Includes: bean mix; 1 spice packet; 1 crushed pepper packet. Wash & clean beans (Cooking hint suggestions to reduce cooking time: Soak beans 6-12 hours ahead, then drain water. Add salt and tomato sauce or paste when beans begin to soften). In a 4 quart sauce pan add beans to 5 cups water. Cover and bring to boil, reduce to simmer. Brown ground beef and turkey then add to beans with spice packet, tomato sauce or paste and crushed red pepper (optional). Simmer until beans are soft. Salt and pepper to taste. Serve. Cooking Variations: Substitute steak in place of ground meat. Add green pepper, jalapeno or Anaheim peppers. Serve over baked potatoes, top with cheese. Vegetarian: Prepare package without meat. If desired add meat substitute. Cooking Time: 90 minutes (with pre-soaked beans). Serving Size: 1 cup. Number of Servings: 8 cups.
