You Will Need: 1 tbsp vegetable oil; 1 lb boneless, skinless chicken breasts, diced; 1 carton (32 oz) Swanson Chicken Broth; 3 cups water; 1 can (14.5 oz) diced tomatoes, undrained; 1 pouch Swanson Homemade Soup Maker; 1/2 to 1 tsp salt (optional). To Prepare - (Soup mix must be cooked for food safety): Step 1: Heat the oil in a 4-qt saucepan over medium-high heat. Saute the chicken until cooked through. Step 2: Stir in the broth, water, tomatoes and soup mix and heat to a boil. Reduce the heat to medium-low and simmer until the beans and rice are tender, about 20 min. Season with the salt. Top with crumbled tortilla chips and fresh cilantro, if desired. Short on time? Omit oil and substitute 2-1/2 cups shredded cooked chicken for the uncooked chicken. Add during the last 10 min. of simmering. Recommend use by date on container. Discard unused portion of mix. Follow cooking instructions on package. Store in a cool, dry place.
