Lemon chicken with angel hair pasta & artichokes - serves 4, 8 oz. Weis quality whole wheat angel hair (1/2 pkg.), 3 tsp. Olive oil, 8 oz. Skinless, boneless chicken breasts, 1/4 cup dry cooking wine or chicken broth, 2 garlic cloves, minced, 1 cup fresh mushrooms, sliced, 1 tsp. Grated lemon zest, 1 (9 oz.) package frozen artichoke hearts, thawed, 3/4 cup chicken broth, 1/4 cup fresh lemon juice, 1 cup cherry tomatoes, halved, 1/3 cup thinly sliced fresh basil leaves, 1/4 cup grated parmesan cheese, salt and pepper to taste. Heat olive oil in a large nonstick skillet over medium-high heat. Add chicken and sprinkle with salt and pepper; Cook 5 to 7 minutes on each side or until browned and chicken is cooked through. Remove chicken from skillet and let cool slightly. Cut into 1-inch cubes. Using the same skillet, add cooking wine and deglaze pan. Add garlic and mushrooms to skillet; Cook 2 minutes. Add artichokes and lemon zest, and cook for 30 seconds, stirring constantly. Add chicken broth and lemon juice to skillet. Bring to a boil; Return chicken to skillet. Reduce heat, and simmer 3 minutes or until chicken is heated through. Stir in basil and cherry tomatoes and heat for 1 minute. Meanwhile, cook angel hair according to directions. Drain well. Toss pasta with chicken artichoke mixture and serve. Sprinkle with parmesan cheese.

Cook uncovered, stirring occasionally for 5 to 7 minutes, or until desired degree of tenderness is reached. Drain. For casseroles and pour-over sauces, rinse in hot water. For salads, rinse in cold water.
