5 lbs boneless, skinless fresh pork, beef, wild game (shoulder or butt with fat) or poultry; 1 pouch Mrs. Wages Sausage Seasoning Mix. Cut fresh meat into 1 inch x 1 inch cubes (5 lbs of cubed meat equals approximately 11 cups). Combine 1/2 cubed meat and 1/2 of Sausage Mix Packet in a large bowl. Mix well. Repeat with second half. Grind 1 cup of meat mixture at a time in a food processor on medium for 5 seconds, or until desired grind is achieved. Or use meat grinder; grind twice. Refrigerate overnight before forming into individual patties. Store unused sausage patties in the freezer. Cook before serving. Serving Suggestion: For spicier sausage, decrease amount of meat, or add black or red pepper to taste.
