When Amy’s family first discovered the Tamale Verde at their favorite restaurant in Puerto Escondido, Mexico, they couldn’t believe how good it tasted, and kept ordering it over and over again. Amy’s dad hoped that we could re-create the recipe for this wonderful Mexican dish and offer it to Amy’s customers. That was easier said than done. It took three years to perfect…to grow organic tomatillos (which are the heart of the salsa verde) and to make the salsa so that it was just right. All the ingredients are carefully selected and prepared. The organic masa (ground and cooked corn) is poured onto individual parchments, filled with tender organic black beans and a mixture of vegetables, chiles and jalapeños, and then folded and steamed. The tamales are then unwrapped by hand, topped with our delicious verde sauce and served with a side of Spanish rice prepared with organic brown rice. This delightful tamale dinner is a favorite throughout Mexico and will become a favorite of yours as well.

Microwave Oven Make a 1-inch slit in overwrap. Cook on high for 5 minutes. Let sit 1 minute. Serve.

Conventional Oven Preheat oven to 400°F. Remove overwrap. Cover tray with foil and place on a baking sheet. Bake for 45-50 minutes. Let sit 1 minute. Serve.

Toaster Oven Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions.
