The Story of 1-2-3 Gluten Free: Over 15 years ago, I was diagnose with celiac disease. As an adult, I was content to do without, rather than to eat what was available on the market. In fact, I developed the Southern Glory Biscuit recipe when one of the children wanted to have pigs-in-a-blanket for her birthday. We soon found that the children and adults (both celiac and non-celiac) in our family enjoyed the foods I created. Having shared these foods with non-family members, again both celiac and non-celiac, we found these people were equally enthusiastic. Gluten-Free Flour Blend (Rice Flour, Tapioca Starch, Potato Starch), Brown Sugar, Baking Soda, Aluminum-Free Corn-Free Baking Powder (Sodium Acid Pyrophosphate, Baking Soda, Tapioca Starch, Monocalcium Phosphate), Cinnamon, Salt, Cellulose Gum (Stabilizer), Niacin (Vitamin B3), Reduced Iron, Calcium Carbonate, Thiamin Mononitrate (Vitamin B1), Riboflavin (Vitamin B2), Folic Acid (Vitamin B9).


Directions

To Make Banana Bread or Muffins: 1 package Meredith's Marvelous Muffins/Quickbread Mix, 1/2 cup unsalted butter or unsalted margarine, softened, 4 medium overripe bananas, 2 large eggs, room temperature (for egg free version, replace 2 eggs with 3 tbsp. water, 3 tbsp. oil and 2 tsp. baking powder, mixed together). See inside of box of Pumpkin, Carrot, Chocolate-banana, Cranberry-Orange and Zucchini Bread recipes. 1. Preheat oven to 350 degrees F (175 degrees C). 2. Spray muffin tins or loaf pan with non-stick spray. 3. Pour mix, butter or margarine, bananas and eggs into bowl of mixer with paddle attachment. Mix until fully incorporated. 4. Scoop batter into muffin tin or loaf pan and spread evenly. If using muffin tins, fill any empty parts of muffin tin with water to promote even baking. 5. Bake loaf for 50-60 minutes or muffins for 20 minutes, or until toothpick inserted in center comes out clean. Baking times may vary with different appliances. 6. Cool in pan for 5 minutes. Invert onto rack. Cool and serve. Makes one 9-1/4 x 5-1/4 x 2-3/4 loaf pan or 15 large muffins. For Blueberry Muffins: 1 package mix, 1/2 c. unsalted butter or unsalted margarine, melted, 1-1/4 c. blueberries (fresh or frozen and not thawed), 1 c. milk or milk substitute, 2 large eggs, room temperature. In bowl of mixer with paddle attachment, mix together first four ingredients. Then, stir in blueberries by hand. Put into prepared muffin tins and bake as directed above.
