This particular cut is an interpretation to the ancient pasta Busiata of Arabic origin that is obtained by wrapping the bus, or the thin reed of a plant, around the pieces of dough. The name Busiata or Maccheroni al ferro refers to a shape of pasta, which is typical of the Trapani area. This pasta cut, made by the expert hands of the Sicilian housekeepers, is a magic shape that hangs onto the last drop of sauce and is ideal for fish-based sauces. Pasta Cooking Instructions: Use 1 quart (1 l) of water for 3.5 oz (100 g) of pasta. Bring water to a boil, add salt and pasta. Boil for about 19 minutes. Drain pasta in a colander and serve with your favourite sauce. Cooking time 12 minutes. Pasta Storage Instructions: Store in a cool dry place.
