We needed a way to make cooking with our kids fun and whip up a batch of homemade cookies without the mess, hassle, and excess of traditional baking. We set out to make baking mixes that use local, high quality, organic and all-natural ingredients that are wholesome and healthier, such as heart-healthy flax and whole wheat or gluten free flours. So we created just that! No one will know these delicious cookies are the healthier ones. We also realize the value of moderation, as well as baking from scratch. Our kits intentionally make less than traditional recipes and mixes, and our ingredients are individually packaged so you can make any changes you want. Plus, you know exactly what is in your cookie! Ingredients

Organic Powdered Sugar (organic Evaporated Cane Juice, Organic Tapioca), Organic Whole Grain Soft White Wheat Flour, Organic Evaporated Cane Sugar, Organic Ground Flaxseeds, Natural Sanding Sugar (sugar, Fruit And Vegetable Juice For Color), Organic Vanilla Powder (organic Sucrose And Organic Vanilla Bean Extractives), Baking Soda (sodium Bicarbonate), Sea Salt, Baking Powder (sodium Acid Pyrophosphate, Sodium Bicarbonate, Non-gmo Corn Starch, Monocalcium Phosphate).


Directions

You will need: 1 large egg; 4 tablespoons butter (1/4 cup); bowl & spoon (or fork); cookie sheet. Preheat oven to 375 degrees. Grease (or use cooking spray) the bottom of a cookie sheet, or line the sheet with a non-stick baking mat. Melt 4 tablespoons of unsalted butter. The butter should be melted but not boiling. Tip: Place butter in a microwave safe dish, cover with a paper towel to prevent spattering, and microwave for about 40 seconds. In a medium bowl, blend together melted butter, 1. baking soda, 2. vanilla powder, 3. salt, and 4. baking powder until smooth. Add 1 large egg, 5. cane sugar, 6. flax. Beat until fluffy and lightens in color. Stir in the 7. flour and mix well, until no flour is visible and the dough is smooth. Scoop about 1 tablespoon of dough at a time onto the cookie sheet, making 9 to 12 cookies. Don't want frosting? If you prefer cookies without frosting, generously sprinkle the 10. sanding sugars over the dough prior to baking. Bake for 9-11 minutes until golden brown. Let sit on cookie sheet for 2-3 minutes, then transfer to a wire rack to finish cooling. Royal Icing: Smooth, hard, matte finish. You will need: mixer; 1 egg white. In the bowl of standing mixer, beat the egg white of 1 large egg on high for 1 to 2 minutes, until frothy. On low speed, gradually add 8. vanilla powder and 9. powdered sugar until sugar is completely blended. Turn speed to high and beat for 4 to 6 minutes, or until the frosting forms stiff, glossy peaks. Add food coloring if desired, and blend well. Decorate cookies with frosting and 10. sanding sugars. Cream Cheesing Frosting: light and creamy. You will need: mixer; 1 package cream cheese (8 oz or 1/4 cup); 4 tablespoons butter (1/4 cup). In the bowl of standing, blend the softened cream cheese and softened butter until smooth. On low speed, add 8. vanilla powder then gradually stir in 9. powdered sugar until well blended. Add food coloring if desired, and blend. Decorate cookies with frosting and 10. sanding sugars.
