1. In microwave-safe bowl, combine desired amount of medley and 1/4 cup water.
2. Loosely cover and microwave on high for 5-8 minutes, depending on desired crispness. (To ensure even cooking, rotate bowl halfway through cooking time).
3. Drain, serve and enjoy.
Because microwaves vary, cook times are approximate.
Toss medley vegetables in olive oil, salt and pepper. Roast at 450 degrees F for 10-15 minutes and top with freshly grated parmesan cheese.
Chop medley to desired size and use as toppings on a homemade pizza.
