shrimp & fettucini alfredo - 1 lb frozen, ready-to-cook shrimp, 1/2 lb fettuccini, 1/2 cup chopped red bell pepper, 1/2 cup chopped yellow bell pepper, 1 clove garlic, minced, 1-1/2 cup frozen broccoli, cooked & drained, 1 cup frozen crinkle cut carrots, cooked & drained, 1-1/2 cup prepared alfredo sauce fresh basil. Directions: place shrimp in cold water to thaw; Drain and pat dry. Prepare fettuccini according to package directions while shrimp thaws. Saute shrimp, bell peppers and garlic in olive oil in a large skillet over medium-high heat 3 to 4 minutes. Add broccoli and carrots. Cook 2 to 3 minutes. Stir in alfredo sauce and cooked, drained fettuccini. Heat through, tossing gently to coat. Garnish with fresh basil. Makes 4 servings.
cooking instructions - grill: thaw shrimp completely. Place on perforated vegetable grate that has been coated with nonstick spray. Place on hot grill. Cook shrimp 1-2 minutes each side. Saute: melt butter in a skillet, add thawed shrimp and cook 5-6 minutes. If using wine, add only during the last minute. Microwave: place thawed shrimp in a single layer in a microwave safe dish and cover with plastic wrap. Cook on high for 1 minute for each 4 oz. Serving. Boil: use 1 quart of water for each 4 oz. Of shrimp, add a dash of salt to water, and then bring water to boil. Then add shrimp and simmer for 2-3 minutes. Shrimp cooks quickly, so don't over cook. Immediately drain hot water from pan and rinse with cold water.
recommended thawing - put in a colander or strainer with a pan underneath. Cover with plastic wrap and refrigerate overnight. Rinse lightly with cold running water and let drain approximately 2 minutes.

quick thawing - remove desired amount of shrimp from bag and reseal. Run shrimp under cold water for 6-8 minutes.
