We started La Quercia with the goal of making uniquely delicious cured meats from humanely raised American pork. When we finally opened our aging rooms in 2005, we could hardly sleep. Herb even walked through the room of salted hams telling them to be delicious! They were! Happy eating! - Herb & Kathy Eckhouse. No nitrates or nitrites (except for nitrates naturally occurring in sea salt). Federal regulations prohibit the use of hormones in pork. Please recycle. Product of USA.
