Moong dal, also known as gram beans, are grown in India. When hulled and split they yield a small yellow bean. Moong dal translated means, yellow mung bean. They cook very quickly, about half the time it takes to cook lentils. The hulling and splitting of this bean also helps the process of digestion. This is a raw agricultural product so it may contains foreign material. Please clean and pick through it thoroughly before use.

Directions

Basic Cooking Instructions: Wash 1 cup of beans well, then soak the beans in water for 2 hours. Drain, then set aside. In another pan, heat 2 tbsp of peanut oil on medium heat. Add 3/4 cup of minced onion, fry until golden brown. Add 1 tbsp of chopped ginger, 1/2 tsp of cayenne pepper, and 1/4 tsp of turmeric. Fry for an additional 2 minutes. Add soaked beans, 1 tsp of salt and mix well. Pour on 1 cup of water, bring to a boil, lower heat and cover. Simmer for 20-25 minutes. Stir in 3 tbsp of peanut oil, cook covered for 10 more minutes, uncover and fold in 2 tbsp of chopped coriander. Serve warm.
