Mediterranean Barley, Chickpeas and Vegetables Skillet: Experience all the flavors of the mediterranean in this easy, hearty skillet. Barley and beans get topped with feta, olives and herbs for a filling, yet bright one-dish dinner that’s guaranteed to please. 2 tablespoons olive oil. 1/2 cup chopped red onion. 1/8 teaspoon salt. 2 cloves garlic, finely chopped. 1 bag (24 oz) Cascadian Farm organic powered by plants: grains + vegetables + legumes frozen black barley, chickpeas, cauliflower, green beans & red bell pepper. 1/4 cup crumbled feta cheese. 2 tablespoons pitted, quartered kalamata olives. 2 tablespoons chopped fresh Italian (flat leaf) parsley leaves. 1/2 teaspoon chopped fresh thyme leaves, if desired lemon wedges. Prep Time: 30 minutes. Start to Finish: 30 minutes. In 10-inch nonstick skillet, heat oil over medium heat. Add onion and salt; cook 3 minutes, stirring occasionally. Stir in garlic; cook 30 seconds. Add frozen barley blend. Cover; cook 12 to 15 minutes, stirring occasionally, until barley blend is thoroughly cooked. Remove from heat; top with cheese, olives, parsley and thyme.
