Cover and let stand for 1 hour. Drain soak water and rinse beans. Overnight Soak: Rinse and sort beans in a large pot. To 1 lb. of beans (about 2 cups) add 6 to 8 cups cold water. Let stand overnight or at least 6 to 8 hours. Drain soak water and rinse beans. Cooking Instructions: Add 6 cups of hot water to drained and rinsed beans. Simmer gently with lid tilted until desired tenderness is reached, about 1-1/2 to 2 hours. Add salt and pepper to taste. Acidic ingredients, such as tomatoes, vinegar, wine or citrus juices should only be added at the end of cooking once beans are tender. Since individual stoves vary in temperature and power, these instructions are guidelines only. Difference in altitude, hardness of water and product moisture may change the suggested cook time.
