Cooking Spinach: 5 minute sauteed spinach by Chef Tony Baker of Montrio Bistro, Monterey, CA. Ingredients: 454 g Ocean Mist Farms Fresh Spinach. 2 cloves fresh garlic or 1 tbsp or Jarred crushed garlic. 1/4 tsp nutmeg (Try using fresh nutmeg: Sure you can use the pre-ground stuff, but you won't believe the difference in flavour of fresh grated. Just grate on the fine side of a cheese grater or they make a special little graters just for the job). 1/3 tsp salt (or salt to taste). 3 tbsp olive oil. Directions: Garlic: If using fresh cloves, slice thinly or shave on a mandolin. In large pan on medium heat, cook garlic in olive oil for about 1 min. Turn heat to high and all of spinach (Don't worry: it looks like a lot but will cook down in no time). Cook spinach until tender (approx 2-3 min). Immediately add salt and nutmeg, serve & enjoy!
