shrimp rice creole - 1/2 cup diced onion, 1/2 cup diced green pepper, 1/2 cup diced celery, 1 crushed bay leaf, 1 lb frozen shrimp, thawed, 1/4 cup vegetable oil or shortening, 2 cups weis quality instant rice, uncooked, 2 cans (15oz) tomato sauce, 2 tsp sugar, 2 tsp salt; Saute onion, green pepper, celery, bay leaf and shrimp in oil for 5 minutes. Add rice, tomato sauce, sugar and salt. Bring to a boil. Cover and simmer for 10 minutes. Makes about 6 servings.
instant rice pudding - 1 cup weis quality instant rice, 2-1/2 cups milk, divided, 1/4 tsp salt, 1/4 tsp cinnamon, 1/4 tsp nutmeg, 1/2 cup sugar, 1/4 cup raisins, 2 eggs, slightly beaten, 1/2 tsp vanilla; In saucepan, combine rice, 2 cups milk, salt, cinnamon, nutmeg, sugar and raisins. Bring to a rolling boil, stirring constantly. Reduce heat; Boil slowly 10 minutes, stirring occasionally. Mix eggs with remaining 1/2 cup of milk. Slowly add to hot mixture, stirring vigorously with a fork. Cook over medium heat until thickened. Add vanilla. Let cool 10 minutes. Makes about 4 servings.
