Pan Cookie Variation: Preheat oven to 350 Degrees F. Grease 15 x 10 inches jelly-roll pan. Prepare dough as above. Spread into pan. Bake for 20 to 25 minutes or until golden brown. Cool on wire rake. Makes 4 dozen bars. For High Altitude Baking: Increase flour to 2 1/2 cups. Add 2 tsp. Water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes. Melting Directions: Microwave 2 cups morsels in uncovered, microwave-safe bowl on high power for 45 seconds; Stir. Microwaves vary. If needed, heat at additional 15- second intervals, stirring vigorously after each interval until melted. Double Boiler: Place 2 cups morsels in top of double boiler over hot (not boiling) water. Do not cover. Prevent water from coming in contact with morsels. When morsels begin to turn shiny, stir constantly until melted. Once melted, immediately remove top pan with melted morsels from bottom pan. We recommend melting no more than 2 cups of morsels at a time. Once melted, use immediately.
Quality Tip: Store morsels in a cool, dry place (60-70 degrees F), heat and humidity can cause a whitish appearance on morsels that disappears when melted. This is a natural reaction called bloom, and flavor & quality aren't affected.
