To Prepare: Wash & Soak - Wash beans, place in a bowl with 3 of water above the beans. Soak 6 to 8 hours or overnight. Discard soaking water. or Place in pot with 3 of water above beans, bring to a boil, turn off heat, cover, and let sit 1-1/2 hours. Discard soak water, or use to water plants. Cook In a heavy pot, 3 cups water to 1 cup soaked beans. Bring to a boil. Cover, reduce heat, simmer until tender, add water to cover beans as needed. Note 1/2 cup dry beans = 11/2 cups cooked. Miso Soup - Kidney Bean 1 cup dry Kidney Beans, soaked. 1 piece Kombu, 2 long, optional 7 cups water. 1 cup onions, diced. 1/2 celery, diced. 1/2 cup carrots, diced. 1/2 cup organic sweet corn. 1/2 tbsp genmai miso, pureed in 2 tbsp water. 2 tbsp scallions, chopped fine Place beans, kombu, & water in a pot, bring to a boil. Reduce heat to medium-low, cover, simmer for 1 hr. Add vegetables. Cover and simmer 30 min. or until beans are tender. Reduce heat to low and add miso. Mix and simmer for 5 mien. Garnish with scallions.
