Directions

4 Simple Steps: 1. Preheat oven to 450 degrees. Wash and dry all produce. Mince 1 garlic clove (save the other for another use). Halve and peel shallot. Using the largest holes of a box grater, grate shallot into a large bowl. In a small bowl, combine ketchup and 1 tbsp vinegar (we sent more). Add beef, panko, minced garlic, and 3/4 tsp salt to bowl with grated shallot. Season with pepper. Gently combine mixture, then form into two 1-inch-tall loaves. Place on one side of a lightly oiled baking sheet. Tip: For easy cleanup, line baking sheet with aluminum foil. 2. Brush meatloaves with half the ketchup mixture. Bake for 10 minutes. Meanwhile, peel and dice sweet potato into 1/2-inch pieces. Place in a medium pot with enough salted water to cover by 2 inches. Boil until tender, about 10 minutes. Reserve 1/4 cup potato cooking liquid, then drain and return potato to pot. Cover until ready to mash. 3. Once meatloaves have baked 10 minutes, remove baking sheet from oven. Brush with remaining ketchup mixture. Toss green beans on empty side of sheet with a drizzle of olive oil, salt, and pepper. Return baking sheet to oven until meatloaves are cooked through and green beans are tender, about 15 minutes more (Beef is fully cooked when internal temperature reaches 160 degrees). 4. Mash sweet potato until mostly smooth. Stir in honey and 2 tbsp butter until melted and thoroughly combined. Taste and season with salt and pepper. Add reserved potato cooking liquid, splash at a time, until smooth. Toss roasted green beans with almonds. Divide green beans, sweet potato, and meatloaves between plates and serve.
