You will need:
Crust packet (included).
Filling packet (included).
1/2 cup fresh lemon juice.
10 tablespoons butter, softened.
3 eggs, room temperature.
Powdered sugar (optional).
Directions:
1. Preheat oven to 350 degrees Fahrenheit. Spray or grease an 8x8-inch baking pan, set aside.
2. Empty contents of crust mix packet into bowl of an electric mixer, add softened butter. Using paddle attachment, beat on med-low until mix looks crumbly, stopping to scrape down sides or bowl as needed. Continue to mix until dough begins to come together.
3. Using your hands press dough into prepared pan and slightly up sides of pan. Prick dough all over with a fork. Bake for 20-25 minutes or until golden around the edges.
4. To prepare filling: Turn oven to 325 degrees Fahrenheit.
5. Empty contents of filling packet into a medium-sized mixing bowl. Whisk in eggs and lemon juice. Immediately pour over hot crust and return to oven for about 20 minutes or until center of filling is set.
6. Allow to cool completely before slicing. Dust with powdered sugar before serving (optional).
Makes 12 bars.
