Robert Rothschild Farm� All Natural Brown Sugar Cinnamon Streusel Gourmet Muffin Mix.
Wheat Flour (wheat Flour, Malted Barley Flour), Sugar, Powdered Sugar (sugar, Corn Starch), Brown Sugar (sugar, Molasses), Baking Powder (sodium Acid Pyrophosphate, Sodium Bicarbonate, Corn Starch, Monocalcium Phosphate), Vanilla, Cinnamon, Salt.
You will need:
1 Streusel topping packet (included).
9 tbsps unsalted butter, softened, divided brown sugar cinnamon streusel muffin mix packet (included).
1 egg, lightly beaten.
1 cup, plus 2 tbsps whole milk, divided.
1 icing packet (included).
Directions:
Preheat oven to 350 degrees F. Line 10 wells of a 12 well muffin pan with paper liners.
Place contents of the streusel topping packet into a small bowl. With a fork, mash 3 tbsps of softened butter with the streusel topping until it is in small crumbs. Add the contents of the muffin mix packet to a large bowl. In a separate small bowl, melt the remaining 6 tbsps of butter in the microwave. Add 1 cup of milk and the lightly beaten egg to the melted butter. Add milk mixture to the dry mix. (Batter should be thick.) Place 1 tbsp of batter in each of the 10 cups. Then place 1 heaping tbsp of the streusel topping over the batter and swirl. Top the streusel with the remaining batter and finally top with the remaining streusel.
Bake for 15 - 20 minutes or until a toothpick inserted into the center of the muffin comes out clean. Let muffins cool for 5 minutes then remove from muffin tin. Let cool an additional 10 minutes. While muffins are cooling, whisk together the contents of the icing packet and 2 tbsps of milk. Add more milk 1 tsp. at a time, if icing is too thick. Drizzle over the top of the muffins.
Yields: 10 muffins.
