Grilling: Mount charcoal briquettes in an uncovered grill; ignite. After about 30 minutes (coals should be gray and ash-covered), spread the coals out. Adjust rack 6- to 8-inches from the coals. Place leg quarters, skin side up, on grill rack directly over the hot coals. Grill, uncovered, for 45 to 60 minutes or until chicken is tender.
