What you'll need:
1 package Bob's Red Mill® gluten free chocolate chip cookie mix.
1 large egg.
3 Tbsp water.
1 stick (1/2 cup) butter, very soft.
Preheat oven to 375 degrees F.
Whisk together egg and water. Add butter and stir until well blended.
Add cookie mix and stir until fully incorporated.
Scoop dough by rounded tablespoonfuls and place 2 inches apart on an ungreased baking sheet.
Bake for 10-13 minutes, until golden brown. Cool on baking sheet for 5 minutes, then move to wire rack to cool completely.
Makes 24 cookies.
Store in a cool, dry place to preserve freshness.
