FAQs about limes

Limes provide 35% of your daily vitamin C allotment. British sailors on long voyages received rations of limes to prevent scurvy in the 1800s, leading to their "Limey" nickname. Limes also contain fiber, calcium, magnesium, potassium, and phytochemicals.

Limes can be stored on your kitchen counter, out of direct sunlight, for one to two weeks. Limes kept in a plastic bag in your crisper drawer will last three to four weeks. Lime juice frozen in ice cube trays makes it easy to add a splash of citrus to any recipe. Prevent lime zest from clumping in the freezer by laying it out on a tray and freezing—store frozen zest in a plastic bag or airtight container.

Contact with lime juice or peels can cause your skin to become extremely sensitive to sunlight. Known as phytophotodermatitis, margarita photodermatitis, or "lime disease,"  it starts as a red, sunburn-like rash and, in severe cases, can cause painful blisters. To prevent this condition, wash thoroughly after touching limes and use sunscreen before spending time outside.
