DOC stands for Denominazione di Origine Controllata. Wines with a DOC designation are made from a specific grape or region and produced with DOC standardized methods. DOC wines are the second-highest quality wines produced in Italy. A Cortese wine with a DOC rating may be labeled "Cortese di Gavi." You can find the DOC designation on the wine label, around the bottle's neck, or on a paper band around the cork with a serial number.

DOCG is an Italian wine classification that stands for "Denominazione di Origine Controllata e Garantita." Italian wines earn a DOCG rating by meeting the DOC guidelines and passing strict quality testing. If you buy DOCG wine, you are getting the finest wine Italy has to offer. A DOCG wine will always have a serial number around the cork or neck. DOCG Cortese wines may be referred to as a "Gavi di Gavi" or simply "Gavi."

Store your Cortese wines at 45-65°F in a wine fridge, basement, or closet. These wines are sensitive to light, so protect them from direct sunlight or overhead fluorescent lights. You can store your Cortese wines for three to five years. Well-made Cortese wines often develop a rich honey or almond flavor if kept in storage.
